STEPS
Place the chicken thigh skin-side down in a frying pan and cook both sides over medium heat until thoroughly cooked.
Microwave the cauliflower rice for 3 minutes.
Once the chicken is cooked, remove it from the pan. Add soy sauce, mirin, and sweetener to the pan to make the sauce.
Return the chicken to the pan and heat for 1 minute while coating it with the sauce.
Serve the cauliflower rice in a bowl and place the teriyaki chicken on top.
