Komatsuna and Pork Spicy Oyster Stir-fry

  • Vegetables

    • 1/2 bunch komatsuna
    • 1 king oyster mushroom
  • Meat

    • 200g sliced pork
  • Oil

    • 2 tsp sesame oil
  • Seasoning

    • 2 tbsp sake
    • 2 tbsp mirin
    • 1 tbsp oyster sauce
    • 1 tbsp soy sauce
    • 1 tsp doubanjiang
  • Thickener

    • 1 tbsp water
    • 1 tbsp potato starch

Cut the root off the komatsuna and slice into bite-sized pieces. Slice the king oyster mushroom in half lengthwise and cut into 1cm diagonal slices.

Mix the seasoning ingredients (sake, mirin, oyster sauce, soy sauce, doubanjiang) in a bowl to prepare the sauce.

Heat sesame oil in a frying pan over medium heat. Add the komatsuna and stir-fry until softened, then remove from the pan.

In the same pan, add the pork and king oyster mushroom. Stir-fry until the pork changes color.

Return the komatsuna to the pan and add the prepared sauce. Once boiling, add the water and potato starch mixture to thicken the sauce. Stir until the sauce is glossy and coats the ingredients.
