INGREDIENTS

  • Meat

    • 200g thinly sliced pork belly
  • Tofu

    • 2 pieces (40g) fried tofu
  • Vegetables

    • 100g bean sprouts
    • 50g chives
    • 100g kimchi
    • 2 slices ginger
  • Seasoning

    • 500cc water
    • 150cc amazake
    • 2 tbsp miso
    • 1/2 tbsp sesame oil

STEPS

Cut the pork belly into bite-sized pieces.

Pat the fried tofu with a paper towel to remove excess oil and cut into 2cm wide pieces.

Trim the chives slightly and cut into 4cm lengths.

Bring water to a boil in a pot. Add ginger and pork, skimming off any foam, and cook over medium heat until the pork is cooked through.

Add amazake and miso, stirring to dissolve. Then add kimchi and fried tofu, cooking until the tofu softens.

Add bean sprouts and chives, cooking briefly. Finish by drizzling sesame oil on top.
