Juicy Eggplant and Pork Nanban

INGREDIENTS

  • Meat

    • 150g thinly sliced pork belly
  • Vegetables

    • 🍆 3 eggplants (240g)
    • đź§… 1/4 onion (50g)
  • Seasoning

    • as needed all-purpose flour
    • 2 tbsp sesame oil
  • Sauce

    • 2 tbsp concentrated soy sauce (3x)
    • 1 tbsp vinegar
    • 🍬 1 tsp sugar
    • đź’§ 2 tbsp water
    • 1 tsp grated ginger
    • a pinch sliced chili

STEPS

Cut the eggplants into diagonal slices (1cm thick) and soak in water. Slice the onion thinly, soak in water for 5 minutes, and drain.

Cut the pork belly into bite-sized pieces and lightly coat with flour.

Mix all the sauce ingredients (soy sauce, vinegar, sugar, water, ginger, chili) in a bowl.

Heat 1 tbsp sesame oil in a frying pan over medium heat. Add the pork and cook until browned on one side. Flip and cook until fully done, then remove from the pan.

Add the remaining 1 tbsp sesame oil to the pan and cook the eggplants over medium heat until golden brown on both sides.

Combine the sauce, cooked pork, and eggplants in a heatproof container. Let marinate for 30 minutes. Serve on a plate and top with sliced onions.
