Infinite Carrot and Enoki Stir-fry

  • Vegetables

    • 🥕 80g carrot, julienned
    • 🍄 200g enoki mushrooms, trimmed and halved
  • Oil

    • 2 tsp sesame oil
  • Seasoning

    • 1 tbsp sake
    • 🍬 1 tsp sugar
    • 1 tbsp soy sauce
    • 1 pinch chili powder

Julienne the carrot and trim the enoki mushrooms, cutting them in half and separating them.

Heat sesame oil in a frying pan over medium heat. Add the carrot and stir-fry until softened. Then add the enoki mushrooms and stir-fry until they are tender.

Add the seasoning ingredients (sake, sugar, soy sauce, chili powder) and stir-fry until the liquid is mostly absorbed.
