    • 1 tsp salad oil
    • 3 tbsp ponzu sauce

Trim excess fat from the chicken thigh. Place skin-side down and make shallow cuts in thick areas. Season with salt and pepper.

Heat salad oil in a pan over medium heat. Place chicken skin-side down and press firmly to ensure even browning. Cook for 7–8 minutes until skin is crispy and edges turn white. Flip and cook on low heat for 3 minutes until fully cooked. Remove and let cool. Slice into 5mm strips.

Place sliced chicken in a plastic bag, add ponzu sauce, and massage gently. Seal the bag, removing air, and refrigerate for 30 minutes to marinate.

Grate the daikon radish and lightly squeeze out excess water.
