INGREDIENTS
Fish
- 🐟 2 sardines (160g), opened
Vegetables
- 1/4 bunch of komatsuna
- 1/4 bag of bean sprouts
Seasonings
- 🧂 A pinch of salt
- 🧂 A pinch of salt and pepper
- Flour, as needed
- 2 tsp salad oil
- 1 tbsp mayonnaise
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 2 tsp soy sauce
STEPS
Cut the root off the komatsuna and chop into bite-sized pieces.
Sprinkle salt on the sardines and pat dry with paper towels. Lightly coat with flour.
Heat half of the salad oil (1 tsp) in a frying pan over medium heat. Add komatsuna and bean sprouts, stir-frying until softened. Season with salt and pepper, then remove from the pan.
Add the remaining salad oil (1 tsp) to the pan and heat. Place the sardines skin-side up and fry over medium heat until golden brown. Flip and cook the other side.
Add the sauce ingredients (sake, mirin, soy sauce) to the pan and cook until the liquid evaporates and coats the sardines. Turn off the heat and mix in mayonnaise. Serve with the stir-fried vegetables.
