INGREDIENTS

- 1/2 medium bitter melon (170g)
Seasoning
- 1 packet (4g) bonito flakes
- 1/2 tbsp sesame oil
- 1 tbsp sake
- 1 tbsp mirin
- 1/2 tbsp soy sauce
STEPS
Slice the bitter melon in half lengthwise, remove seeds and pith, and cut into thin slices. Sprinkle with 1/4 tsp salt (not listed in ingredients), massage, and let sit for 5 minutes. Rinse under water and squeeze out excess moisture.
