    • 1 cup buttermilk

    • 🥚 1 large egg

    • 3 tablespoons coarse sugar (optional)

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Combine flour, white sugar, baking powder, ground ginger, cardamom, baking soda, and salt, then grate in frozen butter and toss until crumb-like texture forms. Stir in crystallized ginger.

Whisk buttermilk, 1 egg, and vanilla extract in a small bowl. Mix into the dry ingredients until no flour clumps remain, careful not to overmix.

Turn dough onto the prepared sheet, form a 7-inch circle, and divide into 8 triangles. Space triangles 1 inch apart.

Prepare egg wash by whisking 1 egg with water and applying to the tops of the triangles. Optionally sprinkle coarse sugar.
