INGREDIENTS

  • Fish

    • 🐟 2 sardines, cleaned and opened
  • Vegetables

    • 🥔 2 potatoes, 300g
  • Seasoning

    • 🧂 Pinch of salt and pepper
    • Pinch of dried parsley
  • Garlic Mayo

    • 🧄 1 tsp grated garlic
    • 1 tbsp olive oil
    • 3 tbsp mayonnaise
    • 🧂 Pinch of salt and pepper

Pat the sardines dry and season with salt and pepper.

Slice the potatoes into 5mm thick pieces and soak in water. Drain the water.

Place the potatoes in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 5 minutes.

Mix the garlic mayo ingredients in a bowl.

Arrange the potatoes slightly apart in a baking dish and place the sardines skin-side down on top.

Spread the garlic mayo over the sardines and bake in a toaster oven for about 10 minutes until cooked through. Sprinkle parsley on top.
