INGREDIENTS
Main
- 200g thinly sliced pork belly
- 🍆 2 eggplants
- đź§… 1/2 onion, sliced
- 4 shiso leaves, julienned
- đź§‚ Pinch of salt and pepper
- 1 tbsp potato starch
- 1 tbsp sesame oil
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 1/2 tbsp miso
- 🌰 1 tbsp toasted sesame seeds
STEPS
Cut the eggplants in half lengthwise, then slice diagonally into 7mm thick pieces. Slice the onion thinly.
Cut the pork into bite-sized pieces. Season with salt and pepper, then massage in potato starch.
Mix all sauce ingredients (sake, mirin, sugar, miso, sesame seeds) in a bowl.
Heat sesame oil in a pan over medium heat. Add pork and stir-fry until the color changes.
Add eggplant and onion to the pan. Stir-fry until softened, then add the sauce and mix well.
Serve on a plate and garnish with julienned shiso leaves.
