Seasoning

- 1 tbsp salad oil
Ginger Sauce
- 1 tbsp sake
- 1.5 tbsp mirin
- 1.5 tbsp soy sauce
- 1 tbsp grated ginger
STEPS
Cut the eggplants diagonally into bite-sized pieces while rotating them. Thinly slice the onion.
Season the pork with a pinch of salt and pepper.
Mix all the ginger sauce ingredients in a bowl.
Heat salad oil in a frying pan over medium heat. Add the pork and stir-fry until the color changes, then push it to the side. Add the eggplants and onion, and stir-fry until the onion becomes tender.
Pour the ginger sauce into the pan and stir-fry until everything is well coated.
