INGREDIENTS
Fish
- 1 can (190g) miso-flavored canned mackerel
Vegetables
- 🍆 2 eggplants (160g), sliced
Oil
- 1 tbsp salad oil
Seasoning
- 1 tbsp mirin
- 🧈 10g salted butter
STEPS
Cut off the stem of the eggplants, slice them in half lengthwise, and then cut into 1cm thick slices. Soak in water and drain.
Heat salad oil in a frying pan over medium heat, add the eggplants, and stir-fry for about 2 minutes.
Add the canned mackerel, breaking it apart as you stir-fry. Cover the pan and steam over low heat for about 2 minutes.
Add the mirin and butter, and stir-fry over medium heat until the butter melts and blends well.
