    • 4 tbsp salad oil

    • 2 tbsp mirin

Pat the squid dry with paper towels and coat evenly with potato starch.

Heat salad oil in a frying pan over medium heat. Add the squid and pan-fry for 2–3 minutes, flipping occasionally, until golden brown. Remove and set aside.

Wipe the excess oil from the pan with paper towels. Add sake, mirin, sugar, and soy sauce to the pan. Heat over medium heat while stirring until the mixture bubbles.
