INGREDIENTS
Main
- 1 frozen udon noodle pack
- 80g pork belly slices
- 🍆 1 eggplant
- 1 tbsp sake
Garnish
- 2 shiso leaves
- Pinch of white sesame seeds
Sauce
- 2 tbsp concentrated soy sauce
- 6 tbsp water
- 1 tsp grated ginger
STEPS
Cut the eggplant in half lengthwise, then into quarters. Place the slices cut-side down.
Place eggplant and pork in a microwave-safe container, add sake, cover loosely with plastic wrap, and microwave at 600W for 3 minutes until pork is cooked. Let cool.
Mix the sauce ingredients (soy sauce, water, ginger) in a bowl.
Microwave the udon noodles according to package instructions, rinse under cold water, and drain.
Plate the udon, top with the pork and eggplant mixture, drizzle with sauce, and garnish with shiso leaves and sesame seeds.
