Place chicken thigh in a bowl, add sake and salt and pepper, and massage to season.

Peel and grate the daikon.

Heat salad oil in a frying pan over medium heat. Add the chicken thigh, cover with a lid, and cook until the chicken is fully cooked. Remove the lid and fry both sides until golden brown. Cut into bite-sized pieces.

Plate the chicken, top with grated daikon and sliced shiso leaves, and drizzle with ponzu sauce.
