    • 3 small ume plums
    • 3 shiso leaves, sliced

    • 1 tbsp salad oil
    • 1/2 pack cooked bean sprouts
  • Sauce Ingredients

    • 1 tsp soy sauce
    • 1 tbsp concentrated mentsuyu
    • 1 tbsp mayonnaise

STEPS

Remove the pits from the ume plums and mash them with a knife.

Cut the chicken thigh into bite-sized pieces and season with salt and pepper.

Heat salad oil in a frying pan over medium heat. Place the chicken skin-side down and cook until browned. Flip and cover with a lid to steam for 3 minutes.

Once the chicken is cooked through, remove it from the pan. Add the sauce ingredients and mashed ume plums to the same pan. Mix well and bring to a boil.

Plate the cooked bean sprouts and chicken. Pour the ume mayo sauce over the chicken and garnish with sliced shiso leaves.
