INGREDIENTS
Main Ingredients
- 🍗 1 piece (250g) chicken thigh
- 1/2 piece (100g) bamboo shoot (boiled)
- 🍄 3 shiitake mushrooms
Seasonings
- đź§„ 1/2 tsp grated garlic
- đź§‚ Pinch of salt and pepper
- 2 tbsp potato starch
- 1/2 tbsp sesame oil
- To taste white sesame seeds
- To taste chopped green onion
Sauce Ingredients
- 1 tbsp sake
- 🍬 1 tsp sugar
- đź§‚ 1 tbsp soy sauce
- 1 tsp doubanjiang
STEPS
Cut the bamboo shoot into sections: slice the tip into thirds and the root into 5mm slices. Trim shiitake stems and cut caps into quarters; halve the stems lengthwise.
Mix the sauce ingredients (sake, sugar, soy sauce, doubanjiang) in a bowl.
Cut chicken into bite-sized pieces, season with salt and pepper, and coat with potato starch.
Heat sesame oil in a pan over medium heat. Place chicken skin-side down, add garlic, and cook until browned. Flip chicken, add bamboo shoots and shiitake, and stir-fry briefly. Add 1 tbsp water, cover, and steam on low heat for 4 minutes.
Add the sauce mixture and stir-fry until evenly coated. Serve on a plate, garnished with sesame seeds and green onions.
