INGREDIENTS
Meat
- 🥩 8 slices thinly sliced beef belly (160g)
Vegetables
- 🍄 2 enoki mushrooms (80g), cut into quarters
- 1/2 pack pea shoots, trimmed
- 150g grated daikon, lightly drained
Condiments
- Ponzu sauce, as needed
- đź§‚ Pinch of salt and pepper
Oil
- 1 tbsp salad oil
STEPS
Grate the daikon and lightly drain the water. Cut the enoki mushrooms into quarters lengthwise. Trim the roots off the pea shoots.
Season the beef slices with a pinch of salt and pepper.
Place a slice of beef vertically, add 1/8 of the enoki mushrooms and pea shoots on top, and roll tightly from the bottom. Repeat to make 8 rolls.
Heat salad oil in a frying pan over medium heat. Place the rolls seam-side down and cook until browned, turning occasionally to cook evenly.
Plate the rolls, top with grated daikon, and drizzle with ponzu sauce.
