Basic Simmered Sardines with Umeboshi

INGREDIENTS

  • Fish

    • 🐟 8 sardines (720g), cleaned
  • Condiments

    • 4 umeboshi (pickled plums)
    • 2 tbsp soy sauce
    • 3 tbsp mirin
    • 🍬 1 tbsp sugar
    • 💧 150cc water
    • 50cc sake
  • Spices

    • 1 chili, deseeded
    • 2 slices ginger

Pat the sardines dry with paper towels.

Cut off the chili stem and remove seeds.

Combine all ☆ ingredients in a frying pan and bring to a boil over medium heat. Add sardines, umeboshi, chili, and ginger, then bring to a boil again. Place a drop lid on top and simmer over low heat for 30–40 minutes, occasionally spooning the sauce over the sardines.

Remove sardines and plate them. Simmer the remaining sauce over medium heat until thickened. Pour the sauce over the sardines and garnish with umeboshi, ginger, and chili.
