INGREDIENTS
Spices
- 1 piece ginger, sliced
- 1 red chili, deseeded
Seafood
- 🐟 4–6 sardines, cleaned
Liquids
- 💧 100cc water
- 🍶 100cc sake
Seasonings
- 2 tbsp mirin
- 🍬 2 tbsp sugar
- 🧂 2 tbsp soy sauce
STEPS
Slice the ginger thinly.
Remove the stem and seeds from the red chili.
Scale the sardines and cut off their heads.
Open the sardines by cutting along the belly and remove the guts. Wash thoroughly.
In a pot, mix sake, water, mirin, sugar, and soy sauce.
Arrange the sardines in the pot and add the ginger and crushed red chili.
Bring to a boil, then cover with a drop lid and simmer for 20–30 minutes.
